If you are a fan of Chinese food you will love the shrimp fried rice, it healthy and very easy to cook. The key to this rice recipe is to use a day old rice because if you use fresh cooked rice it will become mussy. Both rice and shrimp are healthy foods and it is good to have them regularly in our diets for their numerous nutritional benefits.

Ingredients for this rice recipe:

  • 8 ounces small raw shrimp, shelled and deveined
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper
  • 1/2 teaspoon cornstarch
  • 2 tablespoons cooking oil, divided
  • 3 beaten eggs
  • 2 stalks green onion, minced
  • 4 cups leftover rice, grains separated well
  • 3/4 cup frozen peas and carrots, defrosted
  • 1 tablespoon soy sauce (for a gluten-free version use gluten-free soy sauce)
  • 1 teaspoon sesame oil


How to cook the shrimp fried rice:

  • The first thing you have to do when you are preparing this rice recipe is marinate the shrimp. Just take a bowl and add the shrimps, salt, pepper and cornstarch. Let the composition marinate for about 10 minutes at room temperature. Take a wok or a large pan and place it over high fire. When the pan has reached a very high temperature add a tablespoon of oil and make sure it covers the entire surface of the pan.
  • After you have done this take the shrimps and toss them in the pan and let them fry for about 30 seconds without turning them. After 30 minutes flip them on the other side and let them cook for another 30 seconds. Do not let them to cook 100% about 80% is enough. Take them out of the pan and place them on a plate.
  • In the oil where you cooked the shrimp add the eggs and cook them scrambled. Once they are done place them on a plate.
  • Clean the wok and place it again on high temperature, add the same amount of oil and add the green onion. Let the onion cook for a while after which add the cooked rice and stir. Let it cook for about 2 minutes after which turn of the heat.
  • Over the cooked rice and the soy sauce, the shrimps, the scrambled eggs, the carrots and the pies and stir the whole composition. If you feel the need you can add an extra tablespoon on soy sauce.
  • This recipe is meant for 4 people. As you can see it is very easy to prepare.
